Parmesan Chicken Manicotti

Not sure if you remember this, but a couple months ago, I blogged about how much I love to be in the kitchen. It might stem from the fact that I am a picky eater and I like to fix things that I love to eat, but I can’t get enough of it. It also isn’t just things like cookies and cupcakes, although those do make it even better. That being said, I made a goal to try more new recipes and to blog more about my love for food! Here’s to a new series (Michelle in the Kitchen) that will happen at least once a month now,  where I will be sharing a recipe or two that I tried and loved!

I love Italian food. And I love Parmesan Chicken. Put them together and it’s sure to be a hit. Recently, I’ve been really into making meals that we can freeze so in a few weeks if I don’t want to cook, we can pull out a meal out of the freezer and dinner is good to go! This is one of those meals. Even better!

The day I made this, it was one of those days where I felt really unproductive and I just needed a break from the computer and photography things. I needed some me time. I went into the kitchen and finally took the time to make a recipe that had been on my to-try list for a long time. Honestly, it took some time to make. It wasn’t a whip it up fast recipe, but it was definitely worth the time. It’s a repeat recipe for us!
